02 Oct Q&A With Online Coach Elizabeth Stacey Ellis
Were you always health and fitness conscious or was there something that motivated you?
Growing up a dancer, movement was always a huge part of my life. So much so that performing professionally was my first career! Dancing and singing on Broadway tours 8 shows a week necessitates a healthy lifestyle so that certainly motivated my love of fitness and nutrition. I transitioned into fitness officially in 2012, fell in love with coaching and never looked back. Educating myself on the powerful effects of healthy practices solidified into a lifestyle of lifting, running and fueling myself with “clean” nutrient dense food and can’t imagine living life another way. I do want to add that it’s a constant practice, and something you must continue to recommit to every day to make it a lifestyle.
What is your favorite healthy recipe?
I’m all about quick and healthy meals you can whip up fresh in 15 or less! Here’s one of my favorite salads:
• 3 oz tempeh, crumbled and lightly browned in a pan
• 1-2 c of Taylor Farms Asian salad mix (mix of shaved cabbage, kale, carrots) or equivalent
• 1 mandarin orange, segmented
• 2 tbsps ginger dressing
• 1 tbsp sesame seeds
• 1 tbsp sliced almonds, raw
• 3 chives, diced
Not only is it beautifully colorful but it’s DELICIOUS in a snap!
If you don’t like tempeh you can use lean ground turkey or chicken!
Go-to cheat day meal or snack?
I don’t really believe in the term “cheat meal”; I prefer reframing my nutrition into “everything in moderation”. That way, nothing seems like forbidden fruit. For me, and most of my clients, placing something “off limits” can increase the desire for said food, which can lead to unhealthy eating habits.
I would say my favorite indulgence is starting my evening with an amazing glass of wine and ending it with Halo Top! I’m a huge fan of ice cream haha!
Do you have a special morning routine?
I always feel more balanced when I wake up and start my morning with 30 minutes of device-free time. It’s time to collect my thoughts without stressing about notifications, enjoy some coffee, walk my dog, and day dream a bit. My day thrives as a result of this quiet time. And COFFEE. Did I mention coffee? Huge fan. And I use cream. Haha. Life is too short for hot bean water.
Do you stick to any particular diet?
As mentioned above, I believe in eating everything in moderation. In addition, I believe in stocking your kitchen with real food ingredients, like lean proteins, plenty of colorful veggies and fruits, healthy starches and sprouted grains. And supplementing with high quality protein powders and supplements especially if you train hard on a weekly basis or travel often. It’s so important especially as a woman to make sure you are getting enough calcium, omega 3’s, magnesium, iron and vitamin D. This goes for anyone but especially women due to their unique hormone cycle.
My main diet is predominantly plant based; I personally avoid dairy and allow for plenty of fatty fish and occasionally eggs. It’s just how I thrive! There’s no one best way to eat. The best diet or nutrition practice is the one that makes you feel energized day to day, and the one you can stick to!
